MIL Standard for Donuts

New for October 2025. "Federal Specification -  Doughnuts, Fresh" (EE-D-575B) has been around since at least the 1960s.  It was last updated in 1979 but later cancelled in the 1980s, perhaps due to a cost-savings effort.

Sorry, not sorry for the Americanized spelling of "donuts" on this page. But we will point out the MIL spec used the proper British spelling.

Here is a snippet of EE-D-575B, so you can see we are not making this up:

The MIL spec goes on to discuss materials, workmanship, quality and inspection (yum) of donuts, even giving codes for defects.  But it does NOT provide a recipe.  Here is the full document for you to download (most unclassified MIL specs are considered public domain).

EE-D-575-Donut Specification

In order to find a recipe, you should refer to INDEX OF RECIPES - ARMED FORCES RECIPE SERVICE. This is what a quartermaster has uses to feed his troops.  Note that it covers the Army, the Navy, Air Force and Marines but not the Space Force. If they were on a "combat mission" they would be lucky to eat a freeze-dried donut washed down with recycled urine. It is easy to find, but we wil save you the effort, just download it here.

Next you need look for the donut recipe and get its document number (D01900), then google and download it.  Here is the document you need:

D01900 Donut recipe

The recipe is for 100 donuts, and all the measurements are in weird Imperial units like "cups" and "tbsp".  If you are living outside the US you will have to do the conversions to metric. Here is one site that provides the conversions, but we did not check it for accuracy.

The donut recipe does not include glazing or filling ingredient, but it references the following documents we provide below.

D042-00 Cinnamon Sugar Filling

D046-00 Vanilla Glaze

D046-01 Almond Glaze

D046-02 Rum Glaze

Now we have all the documentation we need to fabricate and test military-style donuts.  Stay tuned!
